Had an excellent, fun and rewarding food tasting session with Malcolm Webster, Executive Chef for The Sheraton Grand Hotel & Spa in Edinburgh for our Scottish Champagne Academy Dinner on September 26th. Malcolm really delivered some beautifully presented, balanced and delicious dishes yesterday, which produced some exciting champagne matches for this four course dinner.

To explain, there are four Champagne Academy dinners a year with the Scottish Dinner, Northern Dinner, West Midlands Dinner and London Dinner. These dinners are open to academicians of the Champagne Academy, who have been fortunate enough to have attended acomprehensive study programme in Champagne for a week visiting the sixteen member Grandes Marques Houses of:  Bollinger, Charles Heidsieck, Veuve Clicquot, Heidsieck Monopole, Krug, Lanson, Laurent-Perrier, Moët & Chandon, G.H. Mumm, Perrier-Jouët, Piper Heidsieck, Pommery, Pol Roger, Louis Roederer, Ruinart, and Taittinger.

L’Académie du Champagne, known in Britain as the Champagne Academy, was founded in 1956, does a fantastic job of promoting champagne and with the academicians has hundreds of champagne ambassadors.  Check out The Champagne Academy
